Fragrant Beef Biryani Recipe

Introduction:

Beef biryani is a delightful and aromatic one-pot dish that combines succulent pieces of beef with fragrant rice, infused with a blend of spices and herbs. This recipe guides you through the steps to create a mouthwatering beef biryani that will be the star of any gathering.

Ingredients:

1 lb (450g) beef, cut into bite-sized pieces

2 cups basmati rice, soaked for 30 minutes and drained

2 large onions, thinly sliced

3 tomatoes, chopped

1/2 cup plain yogurt

1/4 cup cooking oil or ghee

2 tsp ginger paste

2 tsp garlic paste

2 tsp biryani masala powder

1 tsp red chili powder

1/2 tsp turmeric powder

1/2 tsp cumin seeds

4-5 green cardamom pods

4-5 whole cloves

1-inch cinnamon stick

1 bay leaf

A pinch of saffron strands soaked in 1/4 cup warm milk

Chopped cilantro and mint leaves for garnishing

Salt, to taste

Marination:

In a bowl, mix yogurt, half of the ginger-garlic paste, biryani masala powder, red chili powder, turmeric powder, and a pinch of salt.

Add the beef pieces to the marinade and coat them well.

Cover and refrigerate for at least 2 hours, allowing the flavors to infuse.

Rice Preparation:

In a large pot, bring water to a boil. Add the soaked and drained rice along with a pinch of salt.

Cook the rice until it's 70% cooked. The grains should still have a slight bite to them.

Drain the rice and set it aside.

Biryani Assembly:

In a heavy-bottomed pot, heat the oil or ghee over medium heat.

Add cumin seeds, green cardamom pods, cloves, cinnamon stick, and bay leaf. Sauté for a minute until fragrant.

Add the sliced onions and sauté until they turn golden brown.

Stir in the remaining ginger-garlic paste and cook for a minute until the raw smell disappears.

Add the marinated beef and cook until it's browned on all sides.

Add chopped tomatoes and cook until they soften and release their juices.

Layer the partially cooked rice over the beef mixture in the pot.

Drizzle the saffron milk over the rice and sprinkle chopped cilantro and mint leaves.

Cover the pot with a tight-fitting lid. You can also seal the edges with dough to trap steam.

Reduce the heat to low and let the biryani simmer for 25-30 minutes, allowing the flavors to meld and the rice to cook completely.

Final Touches:

Gently fluff the rice and beef layers with a fork to mix them slightly before serving.

Serve the beef biryani hot, garnished with additional fried onions, if desired.
